Okay, today I decided that we had gone out to eat enough this weekend so watching the game and cooking dinner.

Pork Roast with Rice

Salad

BBQ'd Fruit Cobbler for desert

Pork Roast with Rice

Few key ingredients:

Wine (not for the food but for drinking, beer, scotch, gin and tonic also work)

Pork Roast - Cut it down the middle, easier to stuff than do it a fancy way.
Onion (large)
1 Apples
2 tsps Garlic (always need garlic, I buy the jars of already minced, a lot easier)
16 oz bag of rice
1 can beef broth
Deli/Dejon mustard
Garlic Salt

After cutting pork in half, spread a thick layer of mustard. Shake the garlic salt liberally covering everything.

Then In an oiled sauce pan put the onion (cut into medium size pieces), garlic, one cut up apple, saute' until the onions are clear. Spread 2/3s of the mixture between the halves of the pork roast.

Put the other half on top, and tie up with some string (anything type will do). Repeat to the top of the pork what you did in the middle with mustard, garlic salt and mixture.

In a roasting pan, (anything deeper than the roast) empty the bag of rice and the can of broth. Then put about 1/2 can of water. Place the roast on top of the rice.

Put in the oven at 350 degrees for about 90 minutes depending on the size of the roast. Use a thermometer to get it to 165 or if you don't have one, slice into after 90 minutes and if no bright pink you are good to go.
